  • 1/3 cup Filippo Berio Extra Virgin Olive Oil
  • 1/3 cup maple syrup
  • Pinch of salt
  • 1–2 tbsp caramel sauce (for rim)
  • Cinnamon sugar (optional, for rim)
  • 1.5 oz spiced rum (or bourbon for deeper flavor)
  • 4 oz chilled ginger beer
  • 2 oz apple cider
  • Ice
  • 1 cinnamon stick (for garnish/stirring)
    • CARAMEL:

      1. In a small saucepan over medium heat, combine the olive oil and maple syrup.
      2. Stir the mixture continuously as it heats, allowing it to simmer gently.
      3. Cook for 5–7 minutes until the mixture thickens and turns a rich caramel color.
      4. If desired, add a pinch of salt for a sweet-salty balance.
      5. Remove from heat and let cool slightly before using.

      DRINK:

      1. Rim the glass with caramel and cinnamon sugar.
      2. Fill with ice.
      3. Add rum and apple cider, then top with ginger beer.
      4. Stir with cinnamon stick and serve.
