RECIPE INGREDIENTS
- 1/3 cup Filippo Berio Extra Virgin Olive Oil
- 1/3 cup maple syrup
- Pinch of salt
- 1–2 tbsp caramel sauce (for rim)
- Cinnamon sugar (optional, for rim)
- 1.5 oz spiced rum (or bourbon for deeper flavor)
- 4 oz chilled ginger beer
- 2 oz apple cider
- Ice
- 1 cinnamon stick (for garnish/stirring)
RECIPE DIRECTIONS
- In a small saucepan over medium heat, combine the olive oil and maple syrup.
- Stir the mixture continuously as it heats, allowing it to simmer gently.
- Cook for 5–7 minutes until the mixture thickens and turns a rich caramel color.
- If desired, add a pinch of salt for a sweet-salty balance.
- Remove from heat and let cool slightly before using.
- Rim the glass with caramel and cinnamon sugar.
- Fill with ice.
- Add rum and apple cider, then top with ginger beer.
- Stir with cinnamon stick and serve.
