Ingredients

  • 1/3 cup Filippo Berio Extra Virgin Olive Oil
  • 1/3 cup maple syrup
  • Pinch of salt
  • 1–2 tbsp caramel sauce (for rim)
  • Cinnamon sugar (optional, for rim)
  • 1.5 oz spiced rum (or bourbon for deeper flavor)
  • 4 oz chilled ginger beer
  • 2 oz apple cider
  • Ice
  • 1 cinnamon stick (for garnish/stirring)
  • Directions

    CARAMEL:

    • In a small saucepan over medium heat, combine the olive oil and maple syrup.
    • Stir the mixture continuously as it heats, allowing it to simmer gently.
    • Cook for 5–7 minutes until the mixture thickens and turns a rich caramel color.
    • If desired, add a pinch of salt for a sweet-salty balance.
    • Remove from heat and let cool slightly before using.

    DRINK:

    • Rim the glass with caramel and cinnamon sugar.
    • Fill with ice.
    • Add rum and apple cider, then top with ginger beer.
    • Stir with cinnamon stick and serve.
