Tomato Parsley Salad

- 1/2 cup Filippo Berio Extra Virgin Olive Oil
- 3 tbsp white wine vinegar
- 2 cloves garlic, minced
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 4 cups packed fresh parsley, stems removed
- 1/2 cup grated Parmesan cheese
- 4 tomatoes, thinly sliced
- In large bowl, whisk together olive oil, vinegar, garlic, salt and pepper. Add parsley and Parmesan; stir well.
- Add tomatoes and toss gently until well coated.
