Tomato-Cucumber Salad

  • 3 tbsp Filippo Berio Extra Virgin Olive Oil
  • 1 tbsp Filippo Berio Red Wine Vinegar
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 2 tomatoes, cut in thin wedges
  • 1 English cucumber, halved lengthwise, sliced
  • 1 head Boston lettuce, leaves torn
  • 1 bunch green onions, sliced


    In large bowl, whisk together oil, vinegar, salt and pepper. Add tomatoes, cucumber, lettuce and green onions. Just before serving, toss gently to coat with dressing.
