Soba Noodle Salad with Soy Dressing

RECIPE INGREDIENTS

  • Soba Noodle Salad:
  • 12 oz soba noodles
  • 12 oz extra-firm tofu, cubed
  • 1 cup frozen shelled edamame, thawed and cooked
  • 1 cup chopped cucumber
  • 1 cup chopped bell pepper
  • 2 green onions, finely sliced diagonally
  • 1 tbsp toasted white and black sesame seeds
  • Soy Dressing:
  • 3 tbsp Filippo Berio Extra Virgin Olive Oil
  • 3 tbsp rice wine vinegar
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp minced fresh gingerroot
  • 1 tsp red Asian chili paste, such as sambal oelek
  • 1 tsp tahini paste
  • 1 clove garlic, minced

RECIPE DIRECTIONS

    Soy Dressing: Whisk together olive oil, rice wine vinegar, soy sauce, brown sugar, ginger, chili paste, tahini and garlic. Set aside.

    Soba Noodle Salad: Cook soba noodles according to package directions, drain. Toss with dressing. Stir in tofu, edamame, cucumber, pepper and green onions. Garnish with sesame seeds.
