Soba Noodle Salad with Soy Dressing

RECIPE INGREDIENTS
- Soba Noodle Salad:
- 12 oz soba noodles
- 12 oz extra-firm tofu, cubed
- 1 cup frozen shelled edamame, thawed and cooked
- 1 cup chopped cucumber
- 1 cup chopped bell pepper
- 2 green onions, finely sliced diagonally
- 1 tbsp toasted white and black sesame seeds
- Soy Dressing:
- 3 tbsp Filippo Berio Extra Virgin Olive Oil
- 3 tbsp rice wine vinegar
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp minced fresh gingerroot
- 1 tsp red Asian chili paste, such as sambal oelek
- 1 tsp tahini paste
- 1 clove garlic, minced
RECIPE DIRECTIONS
Soy Dressing: Whisk together olive oil, rice wine vinegar, soy sauce, brown sugar, ginger, chili paste, tahini and garlic. Set aside.
Soba Noodle Salad: Cook soba noodles according to package directions, drain. Toss with dressing. Stir in tofu, edamame, cucumber, pepper and green onions. Garnish with sesame seeds.
