RECIPE INGREDIENTS

  • 3 1/2 to 4 lb chicken, cut in serving pieces
  • Kosher salt
  • 1/4 cup Filippo Berio Extra Virgin Olive Oil
  • 1 onion, chopped
  • 4 stalks celery, chopped
  • 2 carrots, chopped
  • 2 tbsp chopped fresh parsley
  • 2 heads garlic, separated and unpeeled (about 25 cloves)
  • 1/4 cup dry white wine
  • 1/4 cup water
  • 1/2 tsp dried thyme
  • 1/2 tsp dried basil
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried oregano

RECIPE DIRECTIONS

  1. Preheat oven to 350ºF. Sprinkle chicken with salt. Heat olive oil in heavy skillet set over medium heat; sauté chicken for 15 minutes or until lightly browned.
  2. Place onion, celery, carrots and parsley in bottom of large ovenproof casserole dish. Layer chicken over top; tuck garlic cloves between chicken pieces. Pour wine and water over chicken; sprinkle with thyme, basil, rosemary and oregano. Bake, covered and without lifting cover, for 1 1/2 hours or until chicken is cooked through.
