RECIPE INGREDIENTS
- ¾ cup dried apricots, chopped (about 3.5 oz)
- 2 tablespoons shelled pistachios (about 0.5 oz)
- 3 tablespoons unsweetened shredded coconut (about 0.9 oz)
- 3.2 oz dark chocolate (a little over ½ cup, chopped)
- ¾ teaspoon Filippo Berio Extra Light Tasting Olive Oil
RECIPE DIRECTIONS
- Chop the dried apricots into bite-sized pieces.
- Shell the pistachios (if needed) and coarsely chop half.
- Line a small tray or plate with parchment paper.
- Evenly scatter the apricots, pistachios, and shredded coconut over the paper.
- Melt the dark chocolate in a heatproof bowl using a microwave or double boiler.
- Stir in the olive oil until smooth and glossy.
- Pour the melted chocolate over the toppings, spreading evenly to cover.
- Freeze for 30–60 minutes, or until firm.
- Break into bark-style pieces and enjoy!
