Filippo's Favorite Sicilian Meatballs

RECIPE INGREDIENTS
- 1 cup fresh bread crumbs
- 1/3 cup milk
- 2 lb ground pork
- 3 large eggs, slightly beaten
- 1/2 cup Pecorino cheese with black peppercorns, grated
- 1/2 cup raisins, chopped
- 1/4 cup chopped pistachios
- 3 tbsp minced fresh parsley
- Grated zest of 1 large lemon
- 1 large clove garlic, minced
- Salt
- 1/4 cup Filippo Berio Delicato Extra Virgin Olive Oil
RECIPE DIRECTIONS
- Combine bread crumbs and milk in small bowl; let stand until bread crumbs are well moistened. Mix in pork, eggs, Pecorino cheese, raisins, pistachios, parsley, lemon zest and garlic; season with salt. Form into 8 slightly flattened meatballs.
- Heat olive oil over medium heat; cook meatballs, turning once and browning well on both sides for about 15 minutes or until internal temperature reaches 160°F.
