Orzo Pasta with Shrimp

RECIPE INGREDIENTS

  • 8 oz orzo pasta
  • 3 tbsp + 1/2 tsp Filippo Berio Olive Oil, divided
  • 3 cloves garlic, minced
  • 1 1/4 lb small shrimp, shelled and deveined
  • 1 1/2 tomatoes, chopped
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp chopped fresh parsley
  • Juice of 1 lemon
  • 2 oz feta cheese, crumbled
  • Salt and freshly ground pepper

RECIPE DIRECTIONS

  1. Cook pasta according to package directions until al dente. Drain and toss with 1/2 tsp olive oil; set aside.
  2. Heat remaining olive oil in large skillet over medium heat until hot. Add garlic; cook, stirring, for 2 to 3 minutes or until golden. Add shrimp; cook, stirring, for 3 to 5 minutes or just until shrimp are opaque (do not overcook).
  3. Stir in pasta. Add tomatoes, cilantro, parsley and lemon juice. Sprinkle with feta cheese. Season with salt and pepper to taste.
