- ½ cup diced red onions
- ½ cup white wine vinegar
- 2 shallots, minced
- 2 garlic cloves, minced
- 1 teaspoon minced fresh ginger
- 1 teaspoon grated orange rind
- ¼ teaspoon low-sodium soy sauce
- 2 cucumbers, thinly sliced
- 1/8 teaspoon ground black pepper
- 4 salmon fillets (6 oz. each)
- 1 tablespoon Filippo Berio Olive Oil

Method: Stove Top Cooking
- In a large no-stick frying pan over medium-high heat, combine the onions, vinegar, shallots, garlic, ginger, orange rind, and soy sauce. Bring to a boil, stir and cook for 30 seconds. Remove from heat. Add the cucumbers and pepper. Set aside.
- Rub the salmon with olive oil and grill or broil for 4 to 5 minutes per side. Serve topped with the cucumber relish.
